I would be less concerned about the oil not curing due to oxygen lack (although it surely will take 20-30 times as long!) From that standpoint, it’s a preference. You do tend to see an increase in drying time, but contrary to many statement to the contrary online the oil will cure perfectly well under a coat of poly, because the varnish is not at all a perfect oxygen barrier.. Need a break from all the standing and wood dust?
I can't be certain if the wood itself contributed, but I know that now I always err on the side of caution for these things. As a sword and board Eldritch Knight do I need to put away my sword on my turn if I want to use Shield as a reaction?

The end result of the two products you are using will likely be very much the same, though I’d expect the “Tung Oil finish” to actually build up a little film after enough coats are used.
PU pulls water when drying, both from the air (on one end) and from the wood (on the other side). Polycrylic is a protective coating that is water-based and available in both satin and high gloss finish. Have not used either product, just feel better finishes around. I’d just go with one or the other.
@JasonC, When I was a teenager, I made a set of picture frames for my uncle out of select pine (very clear southern pine, I believe it was). The finish, whether paint, wax, stain, or something else, can make or break a project. Very many coats were applied and allowed to properly cure before another coat was applied. Tung oil (real and pure) yields a beautiful finish both in sheen and water resistance. Some examples of drying oils include tung oil, linseed oil, and walnut oil. If I chose the route the questioner decided upon, I would apply a few coats of carnauba wax on top of the dry and cured tung oil. Looking for information on designing your projects?
